There are two common methods for extracting sesame oil. The mechanical pressing method is characterized by high efficiency, high output, and industrial production. The water extraction method is characterized by high aroma, high quality, and traditional flavor.
Mechanical Pressing
- STEP 1: The impurities in sesame are removed using a vibrating screen, a stone remover, and a magnetic separator. This ensures the purity of the oil. The impurity content of the cleaned sesame should be less than 0.1%.
- STEP 2: Then, sesame enters the softening pot, adjust water and temperature(usually controlled at 47-50℃, making its texture softer. The sesame is pressed into uniform thin sheets by the rolling machine, effectively damaging the cell walls of the sesame and increasing oil yield.
- STEP 3: When frying sesame, we usually adopt a combination of “high heat – low heat”. Final frying temperature is approximately 190-200℃, but the pressing temperature needs to be reduced to 140-170℃. This will prevent the formation of burnt flavor and ensure a clear and bright oil color.
- STEP 4: After frying the sesame, we need to quickly remove the sesame from the pan and “fanned the smoke” to quickly disperse the smoke and heat generated. The temperature of sesame is reduced by 170-180℃.
- STEP 5: Pressing sesame is usually done in a screw pressing machine. It depends on powerful mechanical pressure. The oil is continuously squeezed out of the sesame.
- STEP 6: After pressing, the obtained oil is called crude oil. It contains a small amount of phospholipids, free fatty acids, and pigments. These need to be refined to meet the standards of commercial oil.
- STEP 7: Finally, carry out dewaxing treatment as needed, and then filter to remove it. This effectively prevents the formation of flocculent precipitates of oil in low-temperature environments, increasing oil appearance and quality.
Water Extraction
- STEP 1: Soak the sesame in water for 1 to 2 hours. After soaking, the oil water content of sesame will be approximately 25% to 30%.
- STEP 2: Stir-fry the sesame seeds over high heat until their surfaces bulge, then switch to low heat.
- STEP 3: After frying, quickly pour in about 3% of the water by weight of the sesame. And then continue heating for about one minute. The cooking temperature is generally controlled at around 200℃.
- STEP 4: Cool the fried sesame to approximately 65℃ to 75℃. Then remove the smoke flavor and discard the burnt parts and broken shells.
- STEP 5: Then the sesame seeds are ground into sesame paste. The entire process is carried out at a temperature of only 60–65°C, which belongs to low-temperature grinding.
- STEP 6: Put the sesame paste in the pot, and keep the temperature above 40℃. Add the boiling water equivalent to 80% to 100% of the weight of the sesame paste in four portions.
- STEP 7: Separate the mixture of sesame oil and sesame paste to extract the oil.
